Further to the Clean Up Frying Summit held last month, the BBC has been investigating acrylamides and process contamination. A Special Report will be broadcast in tonight's Six O'Clock News (and on BBC News 24) on acrylamides (subject to no major news events). Aga Foodservice Equipment has worked with the BBC to develop this piece, including filming Falcon Infinity Fryer technology. Operational practices in relation to cooking oil in commercial kitchens will no doubt come under greater scrutiny as a result.
At the Summit William McGrath, Chief Executive of Aga Foodservice, called for further research into process contaminants and acrylamides in particular. Major users, such as the QSR chains, should join this investigative work. At an operational level, practices must change to ensure that cooking oil is cleaned and filtered every day, reducing the risk of acrylamide process contamination. Old fashioned sediment zone fryers which are difficult to clean and filter, should be phased out; investment in new generation fryers is critical, particularly in schools.
