Divertimenti in Marylebone High Street recently held a class showing how weekend lunches can be done in quick time – with no sacrifice in flavour, freshness or presentation! Host Marcia Barrington, rustled up a selection of perfect summer-inspired dishes. Char-grilled squid salad, Slow roasted tomatoes with herby ricotta, Potato salad with chilli and for dessert - Red summer fruit salad (an attractive and delicious dish!). Marcia was an excellent teacher, and threw in plenty of tips and trade secrets to keep guests amused. But best of all the preparation and cooking was done within an hour! Now that’s what we call fast food!
